Cottage cheese (ricotta) is a product obtained by warming the residual whey from cheese making, a process that is, still today, entirely manual. Ricotta Salata is a salted, pressed and short-aged ricotta. Its flavour is slightly salty and the texture is homogeneous and compact. Ricotta Salata is perfect grated on dishes such pasta and risotti. The product is available in several vacuum sizes.
