Re Sardo is a sheep's milk cheese with a minimum maturation of 60 days. The texture is compact, white or pale yellow while the taste is aromatic, well-balanced. We suggest to eat it with bread and fresh fruit, or if it is well matured, grated on traditional Italian dishes such pasta and risotti.
Suggested wine: Cannonau di Sardegna.
