Cottage cheese (ricotta) is a product obtained by warming the residual whey from cheese making, a process that is, still today, entirely manual. Ricotta Montella is a salted, pressed and short-aged ricotta. Its flavour is slightly salty and the texture is homogeneous and compact. Ricotta Montella is perfect grated on dishes such pasta and risotti.
